- 40-30-30 Nutrition was developed from research which indicated that we can positively manipulate the hormonal responses of food by combining macronutrients in the proper ratios at every meal.

Low Glycemic Load/ High Fiber (Glycemic Index)
- The Glycemic Index (GI) of carbohydrates helps us to define what is a ‘favorable' or beneficial carbohydrate vs. an ‘unfavorable' carbohydrate, which we want to reduce in our diets.
- The Glycemic Index is a measure of the entry rates of various carbohydrate sources into the bloodstream. The total glycemic load looks at a meal in its totality to determine the total ‘load' of insulin stimulating carbohydrate consumed at each meal.
- Low GI food items have a slow entry rate which helps ensure balanced blood sugar.
- Balanced blood sugar equates to greater control of disease states, mental clarity, and even moods.
- There are three factors that affect the glycemic index of a particular carbohydrate
- Fiber content - the more soluble fiber a food has = the slower the entry rate.
- Fat content - the more fat that is consumed with carbohydrates = the slower the entry rate
- Structure of simple sugars - the more fructose a carbohydrate contains = the slower the entry rate. This is because fructose must first be converted to glucose to enter the blood stream (a relatively slow process within the liver)
- The glycemic load, then, is the actual amount of insulin-stimulating carbohydrates consumed multiplied by its Glycemic Index. This reflects the reality that a small volume of high-glycemic carbohydrates has the same impact on insulin as a large volume of low-glycemic carbohydrates. This gives us a more accurate reflection of insulin secretion than an individual food items GI index.

- These principles only work if the individual makes them work. Perceptual changes of foods and how you approach them is the most critical component of achieving optimal health. This can only be accomplished for you....by you.
